Today’s Menu:

B: frittata thingy, coffee, banana. – 3pts
S: apple. – 0pts
L: Wendy’s 1/2 apple pecan chicken salad & a diet coke. – 9pts
S: orange. -0pts
D: ~1.5c beef & broccoli, 1/2c brown rice, ~2c egg drop soup, 1 egg roll w/ 1 packet of duck sauce. – 18pts
Recipe for “Frittata Thingy”
1 egg + 1 egg white
Hot sauce
Garlic powder
Splash 1% milk
Handful of fresh spinach
2T shredded parmesan cheese
Mix egg + egg white with hot sauce, garlic powder, salt, pepper, & milk. Beat well. Pour into a small frying pan that has been sprayed with cooking spray. Let sit for 30 seconds, scramble once. Add spinach & 2T parmesan cheese. Cover & let sit. Once firm on the bottom flip the mixture & recover until eggs are no longer jiggly. Transfer to a plate & top with salsa.
