Are complete and total love!
Or at least they will be. Once they come out of the oven.
I used Skinnytaste.com recipe for Petite Chocolate Chip Banana Bread Loaves. But I added some chopped walnuts & made them into muffins.
- 3 ripe medium bananas
- 1/3 cup unsweetened apple sauce
- 1 1/4 cups white whole wheat flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp butter, softened
- 1/3 cup brown sugar
- 2 large egg whites
- 1/2 tsp vanilla extract
- 2 oz semi sweet chocolate chips
- 1 1/2 oz chopped walnuts
Preheat your oven to 325 degrees. Line a 12 muffin tin pan with cupcake liners.
Mash the bananas in a bowl – set them aside.
Cream together the butter & brown sugar. Mix in a separate bowl the flour, baking soda, and salt.
Add to the butter & brown sugar your bananas, vanilla, egg whites, & apple sauce. Mix well. To that add your flour mixture. Once everything is mixed well add your nuts & chocolate chips – don’t over mix!
Put equal amounts into your muffin tin.
Bake for 40 minutes at 325.
They come to 5pts a piece.
I still have 8 minutes before they’re done, but they smell super yummy!
