Salsa chicken is what I’ve got going right now.
3 boneless, skinless, forzen chicken breasts.
1 jar of salsa – any kind.
All ingredients in a crock pot for ~8hrs on low. With ~1hr left I take 2 forks & shred all of the meat & continue to cook.
If you make 6 servings it comes out to 4PPs per serving.
Serve however is your favorite way. I usually make it into chicken tacos. Whole wheat tortilla, salsa chicken, lite sour cream, shredded lettuce, shredded cheese.
And I have a wonderful food find today! LF Cinnamon Graham Crackers! 4PP for 2 whole crackers! I LOVE cinnamon graham cracker, so this is going to be a wonderful mid afternoon snack later. I can’t wait.
B: (4) Strawberries & Cream instant oatmeal. Coffee.
S: (2) Yoplait Light Strawberry yogurt
L: (9) 2c vegetable beef stew
S: (2) Cheese stick
S: (3) 1.5 sheets of cinnamon graham crackers
D: (12) 2 salsa chicken tacos. 1 sliced tomato.
S: (4) Skinny Cow ice cream sandwich, or cup of milk & 1 dove chocolate
