Weeklong Recap

Sorry it’s been a week since I’ve last updated. But it was a holiday week. My life has been crazy busy between work, getting ready for the holidays, and just life in general. Goodness it’s been craziness.

But good.

It was so nice to have a couple days off and be able to spend some time with my family. I went back to my hometown and did Christmas with everyone. It’s a little hectic with all of my running around, but totally worth it. When I got to town on Christmas eve I opened presents with my mom and step-dad. So many nice things. My step-dad got me lots of gift cards, he forwarned me that most of his Christmas shopping came from the CVS because of his and my mom’s surgeries. That’s ok by me. I got Amazon & Best Buy gift cards and think I’ve already figured out what I’ll be getting myself.

My mom got me some clothes I picked out & a really awesome scarf. She’s def figured me out. It’s camo in color with purple skull & crossbones on it. I need to find a cute black t-shirt or something to wear it with. She also got my some new ear-buds for my Ipod and a Polar HRM. I can’t wait to head back to the gym to use them.

After that we went to my Granny’s house for snacks & family time. And from there I went to my dad’s to do Christmas with him. He got me kitchen gadgets, which are always great! Subway gift cards, which are greatly appreciated – I don’t think I’ll have to buy another school night dinner the rest of the year!

After Daddy time I headed back to my mom’s for the night. Up the next morning for stockings & then off to the Granny’s house for family lunch. Always so yummy. After lunch I came back home and had dinner with Mr. Chocolate’s family. By the end of the day I was all fooded out! No more.

I did the present thing with his parents. They got me a Ninja! I’m in love with it & can’t wait to start using it. And then back to Mr. Chocolate’s house to exchange our presents. He got me my gorgeous ring & the boots I wanted. He also surprised me with a really cute sweater, a couple movies, and some awesome bath stuff that I can’t wait to use from a company called Lush. Lots of bath fizzies and bubbles. Some lotions and other potions. Shower gel and body conditioner. I seriously can’t wait until this weekend when I’ll be taking a nice, hot, relaxing bath with a book and a glass of wine.

And I also got a great Christmas gift to myself. I got an email saying that my Erin Condren planner has shipped! Tracking shows that the order for pickup was placed, but whatever, it will be here soon & I can’t wait! Her stuff is a little pricey, but super cute. And based on the reviews I’ve heard & the pictures I see I think it’ll be exactly what I need. Lots of places for notes about the day. Meal planning. Exercise planning. I need all this.

WIM + Weekend Recap

Seriously, the stress hasn’t died down any. If anything it has gotten worse. To a point.

My house worries are over. She wants to rent the room. Which will be a huge help to me. Extra income every month will be much appreciated! The extra money will allow me to start painting & making some small renovations to the house. Starting with the large bathroom – it is seriously dated & needs some major work.

All of my crazy running around over the weekend is done. So that’s good too. I had a blast with my friends & family who came to town this weekend. I did lots of eating with everyone in town though. Whew! Saturday night we went to this little hole in the wall joint called Abby’s. But holy goodness it is amazing food. If you don’t get enough to eat from there something is wrong with you. Sunday my mom & step-dad came to town. They took us to Cabo Fish Taco – my favorite taco joint ever! So yummy. I got my usual shrimp tacos but got them grilled with a side of sautéed veggies. Very yummy. And what was even more yummy was the slice of Key Lime Pie I got after lunch. Om nom nom nom.

Now my only worry is school. Blah.

I have 7 out of my 9 individual assignments completed. We have finished 1/2 of the case analysis we’re doing. And we have some solid footing for our final project. I need to do a little bit of research for 1 of my individual questions. Do some more reading for the individual assignment. And find an article to write up a quick review of for my final individual assignment. I fear I won’t get all of this completed in time. I am stressing. To the max.

I’m trying to get some of my homework done here at work – shhh, don’t tell the bosses! – and that’s going fairly well. Still stressing though. I can’t decide if I should stay with the one I love or not tonight. I have so much I need to get done. I need internet access to do it. He doesn’t have such a thing at his house. It all hangs on how much work I get done while here at work.

Back On Track?

Goodness I hope so!

I struggled some last week. But I did manage to lose about .3# at WI yesterday, so that’s good news.

Last week was rough. Things with the one I love hit a  really rocky time for some reason – I don’t think either of us know why. My Papa was in the hospital & had surgery. And I had PMS going on. Needless to say I ate my emotions the other night – all of them. And didn’t track any of it.

But starting yesterday everything has been planned & tracked. I feel back in control. I stuck to my plan yesterday. I have a plan for today that involves yummy foods. I can so totally do this!

I made my chicken with swiss, spinach, & mushrooms the other day. Oh my goodness it was amazing!

The one I love totally loved the mushrooms. He told me next time I saute them up like that I have to make extra for him to snack on. It was so good & so easy. The hardest part was sauteing the mushrooms & spinach!

Tonight I’m making EB’s Bubble-Up Enchiladas for dinner.

I’m altering it some by adding in some jalapenos, corn, mushrooms, & if I can find it chorizo. The one I love (and myself) LOVE chorizo. It’s so good & spicy. I figure I’ll only add about ~6oz (1oz per serving)  of it – since I’m going to follow her recipe with the ground turkey I also think it will help add a little extra flavor.

I’m also going to leave out the black beans.

So, my version of the recipe is as follows:

1 1/4lb of Lean Ground Turkey
6oz Chorizo
1/2c diced jalapenos
1c frozen corn
8oz tomato sauce
10oz enchilada sauce
7.5oz can refrigerated biscuits
1c WW Mexican Blend cheese

I’ll follow her directions (follow the link for those) to cook it all.

With these ingredients it does add a few extra double the points to 14. But we both love chorizo. It’s not something I’ll make this way often just because it is 14pts a serving, but I have the extra points right now.

Seriously. Didn’t sleep for beans. At all. It was awful.

I tossed & turned, paranoid I was going to over sleep & be late for work. I would wake up & look at the clock constantly. It was awful.

I hate Spring Forward. With a passion!

That being said.

This weekend was overall pretty good.

I totally avoided my homework, which wasn’t pretty good. Lots to do tonight & tomorrow. Go self!

But that’s ok. I had a good time.

Dinner & movie Friday night w/ the bestie. Dinner Saturday night with the one I love, the step brother & his GF. And lunch Sunday w/ the family. Wonderful weekend.

Except that things with the one I love seemed tense all weekend long. Just weird. He was cranky. I was snippy. We were totally off. He stayed over last night & I think it was the best thing for us. It let us get back to where we needed to be. Back to our happy place.

Friday Ramblings

Sometimes I feel sexiest when I’m in my yoga pants & wearing the one I love’s old college football sweatshirt. I still have my makeup on from the day. My hair still looks decent. I might be caught with some cute jewelry on. All I’m doing is crawling into bed, but to feel like I look cute makes my whole day.

Which is good. Because the morning started off really shitty. I had a GYN follow-up. I dread these visits. They bring make so many unhappy memories & emotions. I just feel like I’m in the waiting game for cancer. I hear the word every time I go for these visits. It scares me. He told me today that most people who have the issues I’ve had end up with cancer within 5 years. He did mention that the specific issue I had typically doesn’t turn into cancer – but the issue it began as & mutated from does. So I’m still not in the clear. I started with HPV in my cervix. Somehow, someway, it mutated. And I ended up with high grade dysplasia of the vulva – or VIN 3 as he referred to it. I got a clean bill of health this visit, he said at my next visit in 6 months he’ll do another check & if everything is clear we’ll discuss going back to only yearly visits. I haven’t had only yearly visits to the GYN in at least 4 years. So, say a little prayer if that’s your thing.

Other than that my day was fairly decent. I stopped by my grandparents house on my way back to my mom’s. Grandma had fixed biscuits, bacon, & eggs. I splurged a little & had a second biscuit with some homemade strawberry jam. But seriously, it’s the best jam in the world. She made it the old fashioned way – whole fruit cooked for hours with sugar & other things. I could feel the sugar crystals as I was eating it. But it was amazing. I had 2 biscuits & jam.

After that I took a nice, long nap. About 3 hours! It was needed. Between my dog being antsy/whiney about being in a new place, my step-dad getting up at 4am to get ready for work, and not sleeping in my bed, I didn’t sleep for beans last night. That nap was very much needed.

Dinner with my mom’s side of the family. It’s always nice to see everybody. I do miss them a lot. I wish I could see them more. My grandparents are getting older & I wish I was around them more.

Tomorrow morning is a Zumbathon. 2 hours of Zumba. I may die. It’s a very good chance. After that I’m sure I’ll nap. Haha! And then do some stats homework – work on my project & study for my final. Work on my assignment I need to have ready to mail out by 2/27 for my final class to graduate. Lots to do school-wise this weekend.

So I signed up for another 5k today. I say another like I’ve already signed up for one. I have plans to sign up for a 5k that is on April 6. I did sign up for the 5k on April 13. Both a remembrance runs.

The one on April 6 is for a young man who died in a car accident his senior year of HS. The on one on April 13 is the 3.2 for 32 Hokie Remembrance run for the 32 victims of April 16.

I guess that means I really need to start working on my walking/running. Good thing Heather & I currently have a semi standing date to meet on Sunday to do just that!

Going back to my home town tomorrow. I know there will be lots of food. Good food. Unhealthy food.

I’m stopping by my Grandma’s for breakfast on Friday. She is a true Southern lady cook. Nothing healthy or good for you. I’ll have to be very careful with my portions.
