Chicken Stir Fry & Friday Ramblings

Last night I cooked dinner. And actually took a picture of it so I can tell y’all all about it!

This is a pretty big deal since I haven’t cooked in a few weeks. And what I have cooked has been super easy, super quick (ok – this was too!) and just not the best things for me. I’m usually cooking for the one I love & things he would like to eat. Last night, I cooked for me. Peppers, onions, and all!

Chicken Stir Fry with Cellophane Noodles

I’m sorry the picture is horribly blurry, I took it with my phone and was more worried about eating it than taking a non-blurry picture.

That being said. This was the easiest meal I’ve ever made. My only issue with it – and I have to blame myself here – was that my “stir fry mix” was only peppers and onions. Where are the water chestnuts and baby corns!! Oh well, I’ll remember to buy the better kind next time.

This whole recipe probably took about 30 minutes. That included prep, cooking, and picture taking.

I will say that I enjoy spicy things. If you don’t, either leave out some or all of the Sriracha Sauce.

Ingredients:

1 Roll Cellophane Noodles
3-4 T store bought (or homemade) Stir Fry Sauce
1T Soy Sauce
2t Sriracha Sauce
4oz Boneless/Skinless Chicken Breast
2c Frozen Stir Fry Vegetable Mix
1-2t Minced Garlic
1T Olive Oil

Directions:

1. Dice the chicken into small chunks, about 1/2 inch square.
2. Heat a pan with olive oil until hot & add the diced chicken & minced garlic until almost cooked through.
3. In a separate pot warm water & add cellophane noodles for about 2 minutes (until re-hydrated)
4. Add frozen vegetables to the pan with the chicken. Add stir fry sauce, soy sauce, & sriracha sauce to the vegetable & chicken. Cook for about for about 2 minutes. (I did this & step 3 at the same time.)
5. Add cellophane noodles & let sauce cook down for about 5 minutes.
6. Serve.

I told you. So easy. And so good. It will 100% be a regular go to week night dinner for me. I forgot how easy it was to make. And you can use any meat you want! I just happened to have some frozen chicken breasts in the freezer & thawed on out knowing I wanted chicken last night.

I use SparkPeople, so I don’t know all of the nutritional information – but here is what SP gave me. For those of you who count Fiber, I do not have the fiber content of this.

Carbs: 64g
Fat: 18g
Protein: 28g

On another note, I woke up this morning to snow. SNOW! In October. Yes, I do realize that there are people out there who have had several feet of snow by this point in the year – but I don’t live there. I live in Virginia. It’s too early for this.

I’m so not ok with this crazy weather. And the low for tonight is only supposed to be 25 degrees. Ok, I get that we’re coming into the cooler seasons, but 25 degrees? In October? This is just insane. Mother Nature is clearly pissed off at Virginia.

And Mr. Chocolate won’t turn the heat on in the house. I am SO not ok with that. I may have pouted and put my foot down last night. Told him he can chose between having no heat in the house or having me stay with him. Ok, I may not have put it in those exact terms. I just politely informed him that if he was going to refuse to turn the heat on again today and this upcoming weekend I would be staying at my house. Where there is heat. And I don’t walk around wrapped up in sweats and a comforter. I think I may have convinced him.

I guess that means he loves me, seeing as he’s agreed to turn on the heat and all. It’s the little things.

Snow? Really?

I can’t believe the weather is calling for snow flurries.

I don’t know why I don’t believe this. It’s 2 months until Christmas. I was just looking at signing up for the Jingle Bell Run 5k this December. All of this equals cold. Which, here in VA, equals snow.

I’m just not ready for it yet.

And speaking of the Jingle Bell Run 5k – I think I’m going to do it. I hardly workout. And by hardly, I mean ever. Let’s be honest – I hate the gym. I pay $40 a month in hopes that it will somehow just suck the fat off of me without me actually having to go to the gym. It’s not working yet.

But anyway, back on topic here! I want to sign up for it. And I want to beat my old time – which was around 40 minutes. (Don’t judge me! It was a 5k. In December. In a town they call the “Hill City” – it sucked.) And I’m going to start “training” this weekend. I’m not going to follow C25K or anything. I tried that before & it just didn’t work for me. It’s great, but I found I got bored. I do better when I set my own intervals. So I’ll play around with my phone stopwatch & set up my own intervals to run to. And I’ll keep trying to push myself to be better.

I don’t expect at all to be able to run the entire thing. But I want to do better than I did 3 years ago – when I was 30 pounds lighter. I want to beat that time.

I’m back to cooking!

Tonight I will be making a chicken & veggie stir fry with cellophan noodles. I don’t really have a recipe, but I’ll post how I make it later. I really hope it’s yummy. I made something similar a while ago with shrimp. So I’m really hoping this is good. Last time I just just the store bought stir fry sauce – which I’ll be using again tonight because I already have it on hand. But I’ll probably add some other things to it. I can’t wait to get home & cook my dinner!

I’m Slacking.

Wow. March 25th was my last post? Seriously, this is not good.

I really need to keep up with this more. Even if I just post on my lunch break. I’ve been staying with the one I love pretty often now, so evening posts are out of the question. But I can totally tell that I do much better at staying on plan when I keep this up to date. Is that sad? A blog helps keep me accountable? Very sad if you ask me.

Anyway!

Not a lot has been going on. Doing the whole school thing. I have 1 more class left in my marketing course, then I’m off to accounting. That means lots of paper writing this weekend. I need to form a plan so I don’t order lots of pizza while writing my paper.

We got hit with a freak snow storm yesterday. They were calling for rain. Maybe an inch of rain throughout the day. Yeah, that turned into about 6 inches of snow. Thank goodness it wasn’t light & fluffy snow! It was a heavy wet snow. Had it been nice & fluffy it would have been way worse. There were wrecks everywhere. No one was prepared for this. It took some people hours to get home when normally it takes 30 minutes. I lucked out & made it to the one I love’s house in about 45 minutes. It normally takes me about 20. I drove slow like a little old lady, but I didn’t care. None of the roads had been scraped. Nothing had been pre-treated. His driveway was so bad at times I couldn’t tell if I was in the driveway or in the field. It was awful.

But on to the WW side of things. I pretty much took last week off. I did gain. And over the past 2 weeks I’ve gained back 2 pounds. I am ok with this. The first .2 pound took me by surprise, but I accepted it & moved on. The 1.8lb gain this week was completely expected & I was ok with it. But now I’m back on track & doing good. I’ve stayed on plan the past 2 days.

I haven’t been working out. But tomorrow will have the jump start I need there – my first of 2 5ks I’m doing this month. I also have The Firm Heather gave me, I need to start doing that. Or something. I still haven’t ordered a HRM. Maybe I’ll go ahead & order myself one of those & start The Firm. I think this upcoming week I’m going to focus on things I know how to do & know I can fit in. Like my WATP DVDs. With having my final project due in marketing I want to stick with something I’m familar with for now. Then move on from there.

Seriously.

I’m finally going to see him play in concert!!

The tickets were expensive. Like, 2 tickets & our hotel took up my entire more than my bonus check for next month. But oh so totally worth it!

I can’t wait. It is going to be the highlight of 2013.

2 months & 2 weeks. 105ish days.

The show is in Pittsburgh, PA. 5 1/2hrs from where I am now. The one I love is going with me. Drive up Thursday for the show. Crash at the hotel. Get up Friday & maybe do some sight seeing for a bit. Then drive home.

Ok, so we were supposed to get all this snow last night. Like 2-5inches.

I got up early so I could be certain to get to work on time. I had everything laid out & ready to go for this morning.

I get up & look out the window. Nothing. Notta. No snow.

WTF!!!

So I went back to bed.

I’m really hoping that the Roanoke area gets lots of snow. I want them to cancel my class for tonight. I’m so totally not in the mood to go to class tonight.

Love it!! I wish it were going faster, but 1 pound a week is a really good weight loss. If I could keep at this pace I’d be content.

SNOW!!!

It’s snowing.

And by it’s snowing, I mean it’s been snowing since about 2pm. We’ve got about 7 or so inches outside now.

Snow is totally taking away my motivation to do anything except sit on my bed, watch movies, drink wine, eat pizza, and eat tons & tons of chocolate. Some of the things on that list I’ve done, some I haven’t.

I’m hoping & praying for a snow day off of work tomorrow. That would be amazing.
